Good Food

My sister-in-law, Maggie, is looking for a few good meals. So here are 2 that we like to cook- fast and simple.

Salsa Chili
-ground beef or turkey (browned)
-chopped onion
-salsa (which ever variety you like)
-pinto beans
-tomato juice
(I did not put quantities, because the more salsa and tomato juice you use, the larger the dish becomes, and add beans and meat, etc to make it the right proportions)

Basically you put all these ingredients into a pot, let it cook until it's heated through.
We garnish with sour cream, cheese and tortilla chips.

Chicken & Green Bean Casserole
-1 can green beans, drained (sometimes I add a can of corn too)
-1 can condensed cream of mushroom soup
-2 cups diced chicken or turkey
-1 cup cooked rice
-1/2 cup milk
-1 can French fried onion rings

combine beans, soup, chicken, rice and milk
pour into a baking dish, top with paprika if you want
bake at 350 for 20 minutes, top with onion rings, bake for 1o more minutes or until golden brown
